Low-carb veggie bowl

Veggie Delight Bowl (Serves 2)

Ingredients:

  • 240 ml (1 cup) cauliflower rice (fresh or frozen)

  • 240 ml (1 cup) chopped bell peppers (any color)

  • 240 ml (1 cup) cherry tomatoes, halved

  • 240 ml (1 cup) cucumber, sliced

  • 120 ml (1/2 cup) red onion, thinly sliced

  • 120 ml (1/2 cup) black olives, pitted and halved

  • 120 ml (1/2 cup) feta cheese, crumbled (optional)

  • 480 ml (2 cups) baby spinach or mixed salad greens

  • 30 ml (2 tablespoons) olive oil

  • Salt and pepper, to taste

  • Juice of 1/2 lemon

  • 60 ml (1/4 cup) chopped fresh basil or parsley

  • Instructions:

  • Heat a non-stick pan over medium heat and add 15 ml (1 tablespoon) of olive oil. Add the cauliflower rice and cook for 5-7 minutes, stirring occasionally, until tender and slightly golden. Season with salt and pepper to taste, then set aside to cool.

  • In a large bowl, combine the chopped bell peppers, cherry tomatoes, cucumber, red onion, and black olives. Toss to mix well.

  • Divide the baby spinach or mixed salad greens between two serving bowls. Top each bowl with an equal portion of the cooked cauliflower rice.

  • Evenly distribute the mixed vegetables over the cauliflower rice in each bowl.

  • If using, sprinkle feta cheese over the vegetables.

  • In a small bowl, whisk together the remaining 15 ml (1 tablespoon) of olive oil, lemon juice, salt, and pepper to taste. Drizzle the dressing over the Veggie Delight Bowls.
